I think with apt there's something called "pinning" which prevents
certain packages from upgrading. This has been recommended to stop
urw-fonts upgrading when you've moved from FC2 to FC3, for example. In
/etc/apt/preferences I have these lines:

Package: urw-fonts
Pin: version 2.1*
Pin-Priority: 1000

Perhaps you could do something similar.
