This works for me:

        Option      "TVStandard" "HD480i"  # instead of "NTSC-M"

If you start X with "-logverbose 5", it lists what resolutions are
valid with which standards.  For some reason, "NTSC-M" will take
"1024x768" and "640x480" but not "800x600".
