I use chattr to make fstab immutable, that way it can't be overwritten by fstab-sync.
chattr -V +i /etc/fstab
To undo this if I need to edit fstab
chattr -V -i /etc/fstab
 
The -V is optional, it just diplays the results of your change so that you can see that it worked
