Granted, I wrote nuvexport, so you can pretty easily guess that the 
defaults on xvid are my preference.  I based them on the file sizes of 
things that show up on bittorent/irc/etc.  I also use the multipass 
option to make sure that my files are all more or less the same size on 
disk.

The default xvid settings (multi or single pass are pretty close in 
filesize) produce files that are about 350M per hour of show (minus 
commercials is about 46 minutes) for 624x468 (a decent size for chopping 
off that broadcast border).  I can fit 27 half-hour shows on one dvd, 
and the quality is awsome.

As for those people who talk about using mencoder, I believe that it 
calls the same programs that transcode does.  But people are more than 
welcome to write more modules for nuvexport, as long as they work on 
both mpeg2 and true nuv files (mencoder doesn't work on nuv files).
