Well, if your default profile is somehow screwed up, it will fall back 
to the default codec, which is RTjpeg.  Your recording profiles should 
look like this (at a minimum):

Recording groups:

	Software Encoders (v4l based):
		Default
		LiveTV
		High Quality
		Low Quality

	Transcoders:
		Default
		LiveTV
		High Quality
		Low Quality

You should be changing the "Software Encoders (v4l based) -> Default" 
profile.
