I've got a fair amount of overscan, but I just scale down the mythtv
interface to fit perfectly. I don't ever use if for anything but
mythtv, so its a non-issue for me.

I believe mine does deinterlace, even in the component inputs, since
its a 1080i set.

Well, I do have deinterlacing turned on in mythtv, along with jitter
reduction and experimental A/V sync...

1920x1080i, so I'd guess the TV might be doing some deinterlacing,
given that its getting a signal electronically equivalent to a 1080i
signal.
