Hi Robert,
i had the same trouble:

backend: PVR350  on a small via c3 board
frontend: ASUS board with athlon 2000

The live tv and the playback was verry choppy. It was not usable.

I tracked down the problem: 
The backend is transfering the video stream with tcp push-mode (ACK
needed within a small timeout).
The frontend did not send the ACK to the backend.  But the frontend was
not very loaded: only 10-15 % cpu usage!

Reason:
the onboard ethernet was sharing the interrupt with the vga card.  It
seem's that from time to time
an interrupt was lost. 

Solution:
Diasable the onboard ethernet and use a cheap PCI ethernet card.
