After loading a video in gmplayer (not doing this from MythTV), I used
the video equalizer to change things. I think it's one of the options
when you right click on the playing screen in gmplayer. After tweaking
the video settings down, the tv card's saturation brings it back up to a
more normal state. It's better than having it off, of course.
I think you can tweak all these values with mplayer as command
line/configuration file options. The man pages have a bunch of options
for video filters where you can adjust gamma/contrast/saturation, etc.
with the eq and eq2 options under the -vf. Mplayer's options are
immense!

For MythTV, you might try using the CVS build, and pressing "F" while
watching
playback. It cycles through the setting of hue, color and brightness. I
get
reasonable results, but need different settings on different
televisions.
