You don't need a monitor after you have myth running perfectly
(unfortunately nobody has myth running perfectly...)  But you can always
log in from another machine using ssh (or whatever you like)  The
problem is that that way you won't see the boot msg or the lilo prompt
for example.  So, short answer, eventually you won't need a monitor,
initially you will.

For your second question, I don't use RH but I would try it with all the
cards installed.
